The Lone Star Luncher, a.k.a. Wondergood from Dallas, TX showed up on the lunch scene on 11/23/15 with a modest salad. No one could have predicted on that day that nearly a month and a half later he would be one of the most prolific Lunchers of his time. It’s a funny thing, lunch. Some people are just really really good at it. We were lucky enough to sit down with this Lunch Legend and hear just what he had to say.
Describe your approach to lunch.
I simply like to get out of the office. Doing Luncher has really forced me to think through doing different things and trying new dishes. If you caught me in 2014, it would be the same chipotle dish every day for 10 months. Maybe I would get pity votes?
What makes a good lunch?
Depends on what the rest of your day looks like. A "great" lunch could mean you're productivity is at zero when you get back to the office. Either way, for me, it needs to be satisfying. It's always easy to get back to work when you feel like you're not longing for a quality meal.
What makes a good photo of lunch?
It's all about lighting. Not enough light can make the best tasting dish look weak. Make sure to get the star in the image. A burger shot overhead is just a bun and ain't no one going to vote for a bun.
Which one of your lunch wins are you most proud of and why?
It's always the home chef stuff I'm pumped about. I'm most impressed with those that win with a home meal as they don't always carry the same plating skills as the restaurant quality dishes.
What's the lunch scene in Dallas like? Clearly some winning dishes!
Food as a whole is amazing in Dallas. You might end up having to drive a little to get something specific (e.g. Chinese, if you work downtown) but most areas offer a fairly large variety.
Corn or flour tortillas?
Almost always flour. Unless you're doing a Migas or something.
What dish do you predict will get you your next big win?
There are times I'm shocked at what wins and what doesn't (both mine and others). I'm going to attempt to make an at work grilled cheese take the cake.
If you could lunch with one person, past or present, who would that be, and what would you order?
Alec Baldwin, either sushi or steak.
